Commercial Studio Wiring / Pre-Amp / Patchbay Question

I'm curious about how commercial studios wire their live rooms to work with both console pres and external/500 series pres.

Do the wall plates in the live rooms have certain inputs that run to the console xlr inputs and others that run to each external pre that they have?

Are they running all wall plate connections to a patch bay and then from the patchbay to either a console or an external pre. If so how is the phantom power arriving at the mic?

From a home studio perspective it seems that xlr patchbays are the easiest way to re-route mic level signals, but I only see TRS and tiny telephone patchbays in pro studios.

Also it seems that patchbays are most utilized for patching inserts and signals that are already at line level.

Thanks in advance for the feedback.
