Making organic ambient pads

I'm curious as to how most ambient producers I listen to have such unique and organic sounding pads. Like they sound so big, and lush but they are subtle too. Unfortunately at this point im kind of a preset addict, trying to stop that, but I've rarely heard anything as different sounding from preset banks, and the ones I own are pretty solid.
