Apollo Twin solo - jazz guitar sound question

Hello everyone, this is my first post here. I'm a serious classical player, but love electric and doodle with jazz a lot and some rock. I just upgraded to the Apollo from a Lexicon omega. It's a great piece of equipment. I have a month to decide to get some plugins at a discount. I was wondering how I could achieve a warm jazz sound with the apollo. In the vein of Wes Montgomery, pat metheny etc. In the rock arena the mark knoplfer sound. I was wondering if there are any plugins that would get me close to these. I have a mexi start as well as an arch top with a humbucker. The plugin library is vast and so I thought I'd ask!
